1 tin of Lentils (400g)

Rohan’s Spaghetti Bolognaise with lentils (vegetarian)
Super simple recipe with lots of vegie goodness
Serves 3-4 (2 adults and 2 children)(or 3 adults)
Equipment - 1 pot, 1 pan
- Boil some water in a pot with a pinch of salt and a drop of oil, once boiling add the spaghetti and stir to separate the pasta.
- Roughly chop the onion and fry in the pan with a little oil for 30 seconds, add the strained lentils and fry for a further minute. Then add the sauce and bring up to heat and simmer until you are ready to serve.
- Once the spaghetti is cooked (easiest way to test is to take a piece out and bite it, but if you like the dramatic and don’t mind the mess you can throw it at your wall and see if it sticks) strain the spaghetti and portion out on to plates.
- Pour the lentil mix on top and sprinkle the Parmesan cheese equally around. (well maybe you should get a bit extra seeing as you did all the work!)
You are now ready to eat – enjoy
